The protein content in duck meat ranges from 16% to 20%, higher than that of pork (13.3%), while the fat content (19.7%) is lower than that of pork (37%). Additionally, duck meat is rich in B-complex vitamins and vitamin E, and it contains abundant elements such as potassium, iron, copper, and zinc.

 

Furthermore, Muscovy duck contains proteins mainly composed of myofibrillar and sarcoplasmic proteins. Another portion consists of stromal proteins, which, when dissolved in water, transform into collagen and elastin. Muscovy duck also contains a small amount of gelatin, contributing to beauty and skincare.
